1 packet (2 1/4 teaspoons) instant yeast

3 tablespoons (25 grams) brown sugar

1 1/2 cups warm water (about 110ยฐF)

1 tablespoon canola or vegetable oil

3/4 teaspoon salt

4 1/4 cups (540 grams) all-purpose flour

3 cups water

1/4 cup baking soda

4 tablespoons (57 grams) unsalted butter, melted

3/4 cup (150 grams) granulated sugar

3 teaspoons ground cinnamon

4 ounces (113 grams) cream cheese, softened to room temperature

4 tablespoons (57 grams) unsalted butter, at room temperature

1 tablespoon cream or milk

1 teaspoon vanilla extract

1 cup (125 grams) powdered sugar

Instructions

1-In a stand mixer with a dough hook, combine the yeast, brown sugar, warm water, oil, salt, and flour on low speed until mixed. Knead on medium speed for 7 to 10 minutes until the dough is elastic and smooth.

2-Place the dough in a greased bowl, cover it tightly, and let it rise for about 1 hour until doubled in size.

3-Preheat the oven to 400ยฐF. Line two baking sheets with parchment paper and grease them or spray with nonstick spray.

4-Divide the dough into 6 equal portions. Roll each into a 20-inch long log, then cut each log into about thirteen 1 1/2-inch pieces. Place the pieces on the prepared baking sheets, spaced apart.

5-Prepare the baking soda bath by boiling the water, then pouring it into a large bowl. Add the baking soda and stir to dissolve. Dunk the pretzel bites in the bath for no more than 30 seconds, then remove them with a slotted spoon and return them to the baking sheets.

6-Bake at 400ยฐF for 12 to 15 minutes, rotating the trays halfway through, until golden brown. Let cool for 5 minutes before removing from the parchment.

7-Toss the baked pretzels in the melted butter, then coat them generously with the cinnamon and sugar mixture.

8-For the cream cheese frosting, beat the cream cheese, butter, cream or milk, and vanilla extract until smooth and creamy, about 3 minutes. Gradually add the powdered sugar and beat until fluffy.

9-Serve the pretzel bites warm with the cream cheese frosting or other preferred dips.
