โ„๏ธ Amish Snow Day Soup is a hearty and comforting meal perfect for warming up on cold, snowy days.
๐Ÿฅ” Packed with sausage, potatoes, and a creamy chicken broth, it offers rich flavors and satisfying textures in every spoonful.

  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

– 1 pound smoked sausage or diced ham

– 3 cups peeled and diced potatoes

– 2 chopped carrots

– 2 diced celery stalks

– 1 small chopped onion

– 2 cups corn (either frozen or canned)

– 4 cups chicken broth

– 1 can (10.5 ounces) cream of chicken soup

– 1 cup milk or half & half

– Salt and black pepper to taste

Instructions

1-First: in a large pot, combine the 1 pound of smoked sausage or diced ham with the 3 cups of peeled and diced potatoes, 2 chopped carrots, 2 diced celery stalks, 1 small chopped onion, and 2 cups of corn. Add 4 cups of chicken broth and bring everything to a boil over medium heat.

2-Once boiling, reduce the heat and let it simmer for 20 to 25 minutes until the vegetables are tender. Then, stir in 1 can (10.5 ounces) of cream of chicken soup and 1 cup of milk or half & half. Continue simmering for another 5 to 10 minutes until the soup is heated through and creamy.

3-Finally, season with salt and black pepper to taste, and serve warm, perhaps with buttered rolls on the side. This step-by-step approach ensures a delicious result every time, making it easy for beginners.
