Ingredients

– 10 oz spring lettuce mix (or baby spinach)

– 3 medium gala apples, cored and thinly sliced

– 1 cup toasted and chopped pecans

– 1 cup crumbled feta cheese

– 1/2 cup dried cranberries

– 12 oz cooked and chopped bacon

– 1/2 small red onion, sliced thin

– 1/2 cup olive oil (regular or light, avoid extra virgin)

– 1/4 cup apple cider vinegar (can substitute red or white wine vinegar)

– 2 tbsp maple syrup (can substitute honey)

– 1 tbsp Dijon mustard (yellow mustard is an alternative)

– 1/4 tsp salt or to taste

– 1/4 tsp black pepper

Instructions

1-Prepare the dressing: by mixing or shaking all vinaigrette ingredients until well blended.

2-In a large bowl, combine the spring lettuce mix, gala apples, toasted and chopped pecans, crumbled feta cheese, dried cranberries, cooked and chopped bacon, and sliced red onion.

3-Drizzle the dressing over the salad and toss gently to coat evenly.

4-Serve immediately after dressing to prevent wilting and browning.
