Ingredients
Two 9-inch pie crusts
7 large Granny Smith apples, peeled, cored, and sliced into ยฝ inch slices
ยฝ cup granulated sugar
ยฝ cup loosely packed light brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
โ teaspoon ground nutmeg
1 tablespoon lemon juice
Zest of half a lemon
1 large egg, lightly beaten for egg wash
2 tablespoons sanding sugar (optional)
Instructions
1-Chill the dough: Chill pie dough at least one hour or use ready-made crusts.
2-Preheat oven: Set to 400ยฐF (204ยฐC), rack in center.
3-Prep apples: Peel, core, slice 7 Granny Smith apples into ยฝ-inch slices.
4-Mix filling: Toss apples in large bowl with ยฝ cup granulated sugar, ยฝ cup light brown sugar, 2 tbsp flour, 1 tsp cinnamon, โ tsp nutmeg, 1 tbsp lemon juice, zest of half lemon until coated.
5-Bottom crust: Roll one crust to 12-inch circle, โ -inch thick, fit in deep 9-inch pie plate.
6-Add filling: Spoon apples in, discard excess liquid to avoid sogginess.
7-Top crust: Roll second crust same size, place over filling.
8-Seal: Trim extra dough, fold edges under, press to seal.
9-Vent: Cut four slits in top for steam.
10-Egg wash: Brush with beaten egg, sprinkle 2 tbsp sanding sugar if using.
11-Shield edges: Use pie shield or foil for first 25 minutes.
12-Bake: 400ยฐF for 25 minutes, remove shield, drop to 375ยฐF (190ยฐC), bake 30-35 more minutes until golden and bubbling.
13-Cool: Room temp at least 3 hours before slicing.
