2 eggs

3 pieces of thick whole-grain bread

1 large avocado

1 teaspoon lemon juice

Salt for seasoning

1 teaspoon light mayonnaise

1/2 teaspoon Dijon mustard

1 teaspoon everything bagel seasoning

Instructions

1-Add the 2 eggs to a medium saucepan, cover with water, bring to a boil, and boil for 4 minutes. Drain, peel, and cool for 1 minute.

2-While the eggs are boiling, mash the 1 large avocado with the 1 teaspoon lemon juice, salt, and pepper to taste.

3-Toast the 3 pieces of thick whole-grain bread until golden and crisp.

4-Dice the eggs and mix with the 1 teaspoon light mayonnaise, 1/2 teaspoon Dijon mustard, salt, and pepper.

5-Spread the mashed avocado on the toasted bread, top with the egg salad mixture, and sprinkle with the 1 teaspoon everything bagel seasoning. Serve right away for the freshest taste.
