Ingredients
– 3 very ripe medium to large bananas
– Β½ cup (8 tablespoons) unsalted butter, at room temperature
– ΒΎ cup sugar (can substitute with honey)
– 2 large eggs, lightly beaten
– 1 Β½ cups all-purpose flour
– 1 teaspoon baking soda
– Β½ teaspoon salt
– Β½ teaspoon vanilla extract
– 1 cup chopped walnuts (optional)
– Β½ cup raisins (optional)
Instructions
1-Preheat the oven to 350Β°F (175Β°C). Grease and flour a loaf pan thatβs about 9.25 by 5.25 by 2.75 inches to ensure the bread releases easily after baking.
2-Lightly roast walnuts on a baking sheet while stirring to avoid burning, then chop and let them cool if youβre using them.
3-In a mixing bowl, cream together the softened butter and sugar until smooth and fluffy.
4-Mash the bananas to a chunky applesauce consistency and add them to the butter mixture along with the eggs, mixing until well blended.
5-In a separate bowl, whisk together the flour, baking soda, and salt, then combine this dry mixture with the wet ingredients.
6-Stir in the vanilla extract, walnuts, and raisins if youβre adding them for extra texture.
7-Pour the batter into the prepared loaf pan and smooth the top.
8-Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
9-Allow the bread to rest for 10 minutes before transferring it to a wire rack to cool completely.
