Ingredients
2.2 kg bone-in shoulder of lamb
4 tbsp vegetable oil
1 tbsp adobo paste
1 tbsp chipotle paste
4 cloves garlic (minced)
1 tbsp cumin
1 tsp ground coriander
1 tbsp dried oregano
480 ml chicken or lamb stock
1 tsp salt
1 tsp ground black pepper
1/4 tsp ground cloves
Juice of 2 limes
10–12 soft tacos (warmed)
1 red onion (sliced)
4 tbsp chopped fresh coriander
2 jalapenos (sliced)
10 cherry tomatoes (quartered)
4 tbsp salsa
120 ml sour cream
200 g guacamole

Instructions
1-Heat 2 tbsp vegetable oil in a large frying pan and sear the lamb on all sides to lock in the flavors.
2-Add the adobo paste, chipotle paste, minced garlic, cumin, ground coriander, dried oregano, chicken or lamb stock, salt, ground black pepper, ground cloves, and lime juice; bring everything to a boil.
3-Transfer the mixture to a slow cooker and cook on low for 8-9 hours or on high for 6 hours until the lamb is tender.
4-Remove the lamb, shred the meat with forks, and discard the bones for easy handling.
5-Heat the remaining 2 tbsp oil in a frying pan and fry the shredded lamb for 3-4 minutes until it’s crisp and golden.
6-Assemble the tacos by dividing the lamb among warmed tortillas and topping with the cooking sauce, sliced red onion, chopped fresh coriander, sliced jalapenos, quartered cherry tomatoes, salsa, sour cream, and guacamole.
7-Serve with lime wedges for a fresh finish.

๐ฅ For oven cooking, use a heavy-based oven-proof pan with lid at 160ยฐC for 3 hours, adding 180 ml stock and monitor moisture.
