Instructions
-Rinse and pat dry the prawns to remove any excess moisture, which helps them grill without sticking.
-In a bowl, combine the olive oil, garlic powder, smoked paprika, cayenne, lemon juice, salt, and pepper, then coat the prawns thoroughly.
-Preheat your oiled BBQ grill on high until it’s very hot, or use a grill pan on the stove for a similar effect.
-Skewer the prawns if they’re small to prevent them from falling through the grates, then grill for 2 minutes per side until they’re golden and crusty.
-Meanwhile, make the lemon garlic butter by melting 90g unsalted butter with 3 tsp finely chopped garlic and 1/4 tsp salt in a saucepan over medium-high heat until the garlic is light golden, then stir in 1.5 tbsp lemon juice.
-Remove the prawns from the heat right away and drizzle with the sauce, garnishing with 2 tbsp chopped parsley.
-Serve immediately with lemon wedges and crusty bread to enjoy the full experience.
