๐ŸŒฏ These Beef Burritos combine classic and bold flavors for a satisfying, protein-packed meal.
๐Ÿ”ฅ Perfect for quick dinners or meal prepping, they bring a delicious mix of spices and hearty ingredients to your table.

  • Total Time: 30 minutes
  • Yield: 6 burritos 1x

Ingredients

Scale

1 lb ground beef (85/15 lean)

1 medium yellow onion, finely chopped

10 oz can diced tomatoes with green chilies, including juice

1 tsp cumin

1/2 tsp smoked paprika

1/4 to 1/2 tsp chili powder (adjust to taste)

1/2 tsp salt (adjust to taste)

1/4 tsp freshly cracked black pepper (adjust to taste)

15 oz can black beans or tri-bean blend with juice

6 large flour tortillas (10-inch or larger)

2 cups shredded Mexican cheese blend or equal parts mozzarella and medium cheddar

Instructions

1- Making this beef burrito recipe is straightforward and fun, starting with simple prep work. First, gather and measure all your ingredients like dicing the onion and opening the cans, which speeds up the process and reduces stress in the kitchen.

2- Next, heat a large non-stick skillet over medium-high heat and add 1 lb ground beef, cooking it for about 5 minutes until fully done, then skim off excess fat, leaving 2-3 tablespoons for flavor.

3- In the second step, mix in 1 medium yellow onion (finely chopped), 1 tsp cumin, 1/2 tsp smoked paprika, and 1/4 to 1/2 tsp chili powder, stirring until the onions soften and the beef browns, roughly 3-4 minutes.

4- Then, stir in 10 oz can diced tomatoes with green chilies (including juice) and 15 oz can black beans or tri-bean blend (with juice). Lower the heat to medium-low and simmer for 8-10 minutes until the tomatoes break down and the liquid evaporates, seasoning with 1/2 tsp salt and 1/4 tsp freshly cracked black pepper to taste.

5- For the fourth step, lay out 6 large flour tortillas and sprinkle half of the 2 cups shredded Mexican cheese blend on each, add about 2/3 cup of the meat mixture, then top with the remaining cheese. Fold the sides over, tuck in the edges, and roll tightly.

6- Finally, warm a bit of oil in a skillet over medium heat, place the burritos seam-side down, and cook until golden on all sides, about 3-5 minutes. Serve with your favorite toppings for a complete meal. For more ideas on quick meals, check out our quick dinner recipes.
