– 2 carrots, sliced 1 cm thick Brings sweetness and texture to the mix

– 1 tin (400 g) of chopped tomatoes Forms the core of the rich sauce

– 2 tablespoons of tomato paste Boosts the tomato flavor and thickens the dish

– 1 teaspoon of sugar Balances the acidity for a well-rounded taste

– A glass of red wine Infuses depth and complexity into the sauce

– 1 cinnamon stick Offers a warm, spicy note that enhances the overall flavor

– 1/2 cup of extra virgin olive oil Used for sautΓ©ing and cooking to add healthy fats

– 500 g (2.5 cups) of orzo pasta Serves as the starchy element that absorbs the savory juices

– 100 g of grated kefalotyri or feta cheese Sprinkled on top for a finishing touch of richness and saltiness

Instructions

1-First, dice the 1 kg of veal shoulder or beef into even pieces and slice the 2 carrots to 1 cm thick for uniform cooking.

2-In a large pot, heat the 1/2 cup of extra virgin olive oil over medium heat and brown the beef cubes for about 5-7 minutes to lock in flavors.

3-Add the 2 finely chopped medium red onions and cook until they soften, then stir in the sliced carrots and let them release their natural sweetness.

4-Pour in the 1 tin (400 g) of chopped tomatoes, 2 tablespoons of tomato paste, 1 teaspoon of sugar, a glass of red wine, and add the cinnamon stick for depth.

5-Simmer the mixture on low heat for 1.5 to 2 hours until the beef is tender, then mix in the 500 g of orzo pasta and transfer to an oven-safe dish.

6-Bake at 350Β°F for 25-30 minutes until the pasta absorbs the sauce, and finally, sprinkle 100 g of grated kefalotyri or feta cheese on top for a savory finish.
