Instructions
1-First, dice the 1 kg of veal shoulder or beef into even pieces and slice the 2 carrots to 1 cm thick for uniform cooking.
2-In a large pot, heat the 1/2 cup of extra virgin olive oil over medium heat and brown the beef cubes for about 5-7 minutes to lock in flavors.
3-Add the 2 finely chopped medium red onions and cook until they soften, then stir in the sliced carrots and let them release their natural sweetness.
4-Pour in the 1 tin (400 g) of chopped tomatoes, 2 tablespoons of tomato paste, 1 teaspoon of sugar, a glass of red wine, and add the cinnamon stick for depth.
5-Simmer the mixture on low heat for 1.5 to 2 hours until the beef is tender, then mix in the 500 g of orzo pasta and transfer to an oven-safe dish.
6-Bake at 350Β°F for 25-30 minutes until the pasta absorbs the sauce, and finally, sprinkle 100 g of grated kefalotyri or feta cheese on top for a savory finish.
