Ingredients

– 2 pounds boneless chuck

– 1 pound oxtail or bone-in short ribs

– 1 teaspoon neutral oil (such as avocado or vegetable oil)

– 7 ancho chiles, ends trimmed and de-seeded

– 7 guajillo chiles, ends trimmed and de-seeded

– 3 chiles de arbol, ends trimmed and de-seeded

– 1 white onion, peeled and halved

– 6 garlic cloves, peeled

– 4 roma tomatoes

– 1 tablespoon black peppercorns

– 1 teaspoon dried Mexican oregano

– 1 teaspoon cumin seeds

– 1 teaspoon coriander seeds

– 1/4 teaspoon ground cloves

– 1/2 Mexican cinnamon stick (optional, discard if using non-Mexican cinnamon)

– 3 bay leaves

– 1 teaspoon apple cider vinegar

– 3 cups beef broth, divided

– 1/4 cup minced cilantro

– 1/4 cup minced white onion

– Juice from 1 lime

– Corn tortillas

– 3 ounces Oaxacan cheese or mozzarella

Instructions

1-First, bring the meat to room temperature and salt it generously. Heat 1 teaspoon of neutral oil in a large pot and sear the meat until browned, then set it aside.

2-Next, simmer the chiles, onion, garlic, tomatoes, and spices in water for 15 minutes, blend them with apple cider vinegar and some beef broth until smooth, and pour over the meat.

3-Preheat your oven, add the rest of the broth, simmer gently, cover, and braise for 3 hours until the meat shreds easily.

4-To assemble, shred the meat, mix up the cilantro, onion, and lime for toppings, dip tortillas in the broth fat, fry them, add meat and cheese, and fold until crispy.
