Ingredients
¼ cup extra-virgin olive oil
2 small chopped yellow onions
4 cloves of garlic chopped into large chunks
2 seeded and chopped jalapeño peppers
2 cans (15.5 ounces each) of drained and rinsed black beans
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice (from one lime)
3 tablespoons water
¼ cup fresh chopped cilantro, with additional cilantro for garnish if desired
Instructions
1-Start by heating the olive oil over medium heat in a saucepan, then add the onions, garlic, and jalapeños. Cook them until they’re very soft, about 10 minutes, but make sure they don’t brown to keep the flavors mild and fresh.
2-Once that’s done, transfer the mixture to a blender or food processor. Add the black beans, salt, cumin, lime juice, water, and cilantro, then blend until it’s almost smooth you might need to stir it a bit for even texture. If the dip seems too thick, just thin it out with a little more water or lime juice.
