🍲 Breton Beans with Kielbasa and Tomatoes is a hearty and comforting dish perfect for warming up on cold winter days.
πŸ₯– This traditional Polish recipe combines flavorful smoked kielbasa and tender black eyed peas, offering a balanced meal rich in protein and spices.

  • Total Time: 1 hour 55 minutes plus soaking
  • Yield: 4 servings

Ingredients

– 1 cup dried black eyed peas soaked overnight

– 1 medium chopped sweet onion

– 2 cloves chopped garlic

– 1 cup cubed Polish smoked kielbasa

– 2 cups crushed tomatoes

– 1 tablespoon tomato paste

– 3 teaspoons marjoram

– 1 bay leaf

– 3 allspice berries

– Salt to taste

– Pepper to taste

– 1 pinch cayenne pepper for heat

– 1 teaspoon chopped parsley for garnish

– 1 tablespoon butter, ghee, or cooking oil for browning

– 6 cups water for cooking

Instructions

1-Getting Breton Beans just right starts with the basics, like soaking the beans overnight to make them tender. Begin by rinsing the 1 cup of dried black eyed peas under cold water and letting them soak for at least 8 hours; this step ensures they cook evenly. Next, drain the beans and place them in a large pot with 6 cups of water, then bring it to a boil and simmer for 1 to 1.5 hours until they’re soft but still hold their shape.

2-While the beans simmer, prepare the other elements for a burst of flavor. In a separate pan, heat 1 tablespoon of butter, ghee, or cooking oil over medium heat and brown the 1 cup of cubed Polish smoked kielbasa until it’s golden and fragrant. Add the 1 medium chopped sweet onion and 2 cloves of chopped garlic to the pan, sautΓ©ing them until they’re translucent and aromatic, which usually takes about 5 minutes.

3-Once the beans are tender, combine the kielbasa mixture with the beans in the pot. Stir in 2 cups of crushed tomatoes, 1 tablespoon of tomato paste, 3 teaspoons of marjoram, 1 bay leaf, and 3 allspice berries. Let everything simmer together for an additional 15 minutes, allowing the flavors to meld beautifully. Finally, season with salt and pepper to taste, add an optional pinch of cayenne for some heat, remove the bay leaf, and garnish with 1 teaspoon of chopped parsley before serving hot with crusty bread or rice.
