50 70 grams tapioca pearls (boba) dry weight, to be cooked until chewy and sweetened with brown sugar

30 120 ml (2 8 tablespoons) milk or milk substitutes including fresh milk, powdered milk, condensed milk, evaporated milk, or non-dairy creamer for creaminess

15 30 ml (1 2 tablespoons) sweetener of sugar or flavored syrup, to enhance the taste

Optional flavorings such as fruit syrups, powders, or toppings including fruit jellies, red bean paste, mung bean paste, egg pudding, popping boba, or milk foam

Instructions

1-First, brew your tea: Heat water to 176 185 ยฐF (80 85 ยฐC) for green tea or 203 212 ยฐF (95 100 ยฐC) for black tea, then steep for 3-5 minutes for green or 4-6 minutes for black to get a robust base.

2-Next, cook the tapioca pearls: Boil 50 70 grams of dry pearls in water until they become chewy and darken with added brown sugar, which usually takes about 5-10 minutes.

3-Sweeten the brewed tea: Stir in 15 30 ml of sugar or syrup while the tea is still warm to dissolve evenly.

4-Cool the mixture: Let the tea reach room temperature or chill it in the fridge for a colder version, as bubble tea can be served hot or cold.

5-Add milk and combine: Mix in 30 120 ml of milk or substitute, then add the cooked pearls and any optional flavorings like fruit syrups or toppings.

6-Shake and serve: Vigorously shake the mixture in a shaker or by hand to blend well, then pour into a sealed cup with a wide straw for easy sipping of the pearls and toppings.
