2-In a large bowl, mix 1 cup self-rising flour and 1 cup full-fat small curd cottage cheese with a wooden spoon until a dough forms.
3-Flour a rolling pin. Roll the dough into a large rectangle on the parchment-lined sheet.
4-Sprinkle optional 1/2 cup shredded cheddar cheese (or mozzarella, Monterey Jack, Parmesan) on top.
5-Bake for 20-25 minutes until golden brown and firm.
6-Cool slightly before slicing. Prep takes 3 minutes, total time 25-30 minutes.
