1 packet ranch seasoning mix

1 Β½ cups (about 170 grams) shredded cheddar cheese

Β½ cup (around 56 grams) shredded mozzarella cheese

2 chopped green onions for garnish

Optional fresh parsley for garnish

Salt and black pepper to taste

Instructions

1-Preheat your oven: Start by preheating your oven to 400Β°F (200Β°C) and greasing a large baking dish to make cleanup easy.

2-Toss the quartered baby potatoes: Toss the quartered baby potatoes with 2 tablespoons of olive oil, the ranch seasoning mix, salt, and black pepper until they’re evenly coated. Spread them out in the greased baking dish and bake for 25 minutes.

3-Add the sliced smoked sausage: Add the sliced smoked sausage to the dish, stir everything together, and bake for another 15 minutes until the potatoes are soft and the sausage is heated through.

4-Sprinkle on cheese and bake: Sprinkle on the 1 Β½ cups of shredded cheddar cheese and Β½ cup of shredded mozzarella cheese, and pop it back in the oven for 5 to 7 minutes until the cheese melts and bubbles.

5-Final garnish and serving: Garnish with the 2 chopped green onions and optional fresh parsley before serving hot. For the best texture, roast in a single layer and add the sausage halfway through, as I always do to keep things hearty and flavorful.
