Ingredients

– 2 lbs boneless chicken thighs

– 1 cup red chermoula sauce

– 3 lemons

– 1/4 tsp saffron threads

– 2 small preserved lemons (pulp only)

– 4 cloves garlic, minced

– 1/4 cup chopped cilantro leaves

– 2 tbsp chopped parsley

– 2 tbsp olive oil

– 1 tbsp lemon juice

– 1 1/2 tsp harissa

– 1 tsp kosher salt

– 1 tsp sweet paprika

– 1/2 tsp ground cumin

Instructions

1-Grind saffron threads and steep in 2 tbsp warm water until deep ruby red.

2-Slice preserved lemons, scoop out pulp, discard seeds, and roughly chop the pulp. Combine with garlic, cilantro, parsley, olive oil, lemon juice, harissa, salt, paprika, cumin, and saffron water to prepare the chermoula marinade.

3-Rub chicken thighs with chermoula marinade, cover, and marinate for 30 minutes at room temperature.

4-Slice lemons in halves and roast cut side down in a skillet over medium-high heat until charred; set aside.

5-Preheat oven to 400ยฐF (204ยฐC).

6-Grease a 9×13 inch baking dish, place chicken and marinade in a single layer, and cover with foil.

7-Bake for 30 minutes or until chicken reaches an internal temperature of 165ยฐF (74ยฐC).

8-Remove foil, pour lemon juice over chicken, and broil for 5 minutes to slightly char the top.

9-Serve with charred lemon halves, steamed rice, and vegetables. Spoon pan juices over the chicken for extra moisture.
