Ingredients

– 1.25 kg pork belly skinless and with excess fat trimmed

– 150 g marmalade

– 1 teaspoon dried chilli flakes

– 2 tablespoons soy sauce

– Juice of 1 orange

Instructions

1-Preheat the oven to 170Β°C (fan 150Β°C/gas mark 3). Place the pork belly in a roasting tin, cover tightly with foil, and roast for 2 hours and 30 minutes. Allow to cool to room temperature or chill if preparing ahead, then cut into bite-sized pieces.

2-Increase the oven temperature to 200Β°C (fan 180Β°C/gas mark 6). Arrange the pork belly squares on a roasting tray and roast for 30 minutes, turning regularly.

3-In a small pan, heat the marmalade, dried chilli flakes, soy sauce, and orange juice until the mixture bubbles and thickens into a syrupy glaze.

4-Pour the glaze over the pork belly pieces, gently toss them, then roast for another 5 minutes until well glazed.

5-Serve the pork belly squares pierced with cocktail sticks.
