🍚 This Chicken Fried Rice Recipe offers a quick and easy meal perfect for family dinners, delivering balanced nutrition and comforting flavors.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

4 ½ cups cold day-old jasmine rice (or cold long-grain white rice)

½ lb skinless boneless chicken thighs, thinly sliced

1.5 cups frozen peas and carrots or frozen vegetable mix (corn, peas, carrots, green beans)

3 large eggs, beaten

1 small shallot or ¼ onion, finely diced

3 garlic cloves, minced

4 teaspoons neutral oil (such as avocado, sunflower, grapeseed, peanut, vegetable, or canola oil)

1 teaspoon soy sauce (regular or light)

1 teaspoon Shaoxing wine (or dry sherry, dry white wine, or chicken broth)

1 teaspoon cornstarch (or potato starch, tapioca starch)

1 teaspoon neutral cooking oil

2 tablespoons soy sauce (regular or light)

½ tablespoon dark soy sauce (or dark mushroom soy sauce or regular soy sauce)

2 teaspoons sesame oil (or sesame seeds)

1 teaspoon chicken bouillon powder (chicken stock powder)

⅛ teaspoon white pepper (or black pepper)

Instructions

1-Start: Start by marinating the sliced chicken thighs with the marinade ingredients for 5-10 minutes to boost tenderness and flavor. This step adds depth, making the chicken juicy and infused with savory notes. Once done, combine all the sauce ingredients in a small bowl and set it aside for easy use later.

2-Next: heat 1 teaspoon of oil in a large pan over medium-high heat and fry the chicken until it’s fully cooked, then take it out of the pan. Follow this by adding another teaspoon of oil, then sauté the garlic and shallots for about 10 seconds before tossing in the peas and carrots for another 10 seconds. Push this mixture to one side of the pan to keep things organized.

3-In the open space, pour in the beaten eggs with the remaining oil, let them sit for 20 seconds, then scramble and mix them with the vegetables. For a smoother process, check our tips for quick family meals that can speed things up. Now, add the cold rice and cooked chicken back into the pan, tossing everything together thoroughly.

4-Finally, pour the sauce around the edges of the pan, let it toast for about 5 seconds to build umami, then stir until the rice grains turn slightly brown. This method creates that classic fried rice texture. You’ll have a hot, tasty meal ready in no time, perfect for busy nights.

Notes

🍗 Marinate chicken for at least 5-10 minutes to enhance tenderness and flavor.
🍚 Use day-old cold rice for the best texture; if using freshly cooked rice, spread thinly and freeze for 60 minutes to reduce moisture.
🥢 Break up cold rice into separate grains before cooking to avoid clumping and ensure even frying.
