๐Ÿช Enjoy the wholesome goodness of these Oatmeal Chocolate Chip Cookie Bars that combine chewy texture and sweet taste in every bite.
๐Ÿซ Perfect for satisfying cookie cravings with a convenient bar format, they’re ideal for snacking or sharing at gatherings.

  • Total Time: 45 minutes
  • Yield: 24 bars 1x

Ingredients

Scale

1 cup room temperature butter Provides richness and moisture

1 cup packed light brown sugar Adds sweetness and chewy texture

2 cups old-fashioned rolled oats Creates heartiness and structure

1 1/2 cups all-purpose flour Serves as the base structure

2 cups chocolate chips Delivers the classic chocolate flavor

2 large eggs Bind the ingredients together

1 tsp each baking soda & powder Help the bars rise properly

Instructions

1-Preheat the oven to 350ยฐF (175ยฐC) and grease or line a 9ร—13-inch baking pan with parchment paper for easy removal later.

2-Prepare your dry ingredients by whisking together the flour, baking soda, baking powder, and salt in a medium bowl. Set aside for now.

3-Cream the butter and sugars in a large mixing bowl until light and fluffy (approximately 2-3 minutes). This step is crucial for creating the right texture in your cookie bars.

4-Add the eggs one at a time, beating well after each addition. Then, add the vanilla extract and mix until combined.

5-Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix, as this can result in tough cookie bars.

6-Fold in the oats using a spatula until they are evenly distributed throughout the batter.

7-Add the chocolate chips and gently mix to ensure they are well incorporated. For an extra chocolatey treat, reserve 1/4 cup to sprinkle on top before baking.

8-Spread the batter evenly in the prepared baking pan. Use an offset spatula to smooth the top for even baking.

9-Bake for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out with moist crumbs attached (not wet batter).

10-Cool completely in the pan on a wire rack. This step is essential! Cutting the bars while warm will cause them to crumble.

11-Cut into squares once completely cooled. For clean cuts, you can chill the bars in the refrigerator for 30 minutes before slicing.

12-Serve and enjoy! These bars are delicious on their own, with a glass of milk, or alongside a scoop of vanilla ice cream for an extra indulgent treat.
