– Two large ripe but firm bananas, thinly sliced
– Β½ cup melted chocolate chips (semi-sweet, milk, or dark chocolate can be used)
– ΒΌ cup roasted and salted crushed peanuts (optional)
Instructions
1-Whisk the base: In a bowl, mix 1 (5.3-oz) full-fat plain Greek yogurt, Β½ cup smooth peanut butter, 1-2 tbsp honey (or maple/agave), and ΒΌ tsp salt until super smooth. No lumps!
2-Spread it out: Pour the mixture onto the parchment-lined sheet. Spread evenly to about ΒΌ-Β½ inch thick with a spatula.
3-Add bananas: Slice two large ripe but firm bananas thinly. Arrange in rows on top for pretty chunks.
4-Drizzle chocolate: Melt Β½ cup chocolate chips (microwave in 20-sec bursts). Drizzle over bananas.
5-Sprinkle peanuts: Scatter ΒΌ cup roasted salted crushed peanuts for crunch.
6-Freeze: Pop in freezer for at least 4 hours until firm.
7-Break and serve: Remove, break into chunks. Thaw 5 minutes before eating. Store in freezer-safe container up to one week.
