Ingredients
1 cup long-grain jasmine rice, rinsed well and drained
1½ cups water
3 teaspoons olive oil (divided)
1 clove garlic, finely minced
2 scallions, finely chopped
1 teaspoon lime zest
¼ to ½ teaspoon red pepper flakes or diced jalapeño, optional
1½ tablespoons fresh lime juice
½ cup finely chopped fresh cilantro
¼ teaspoon sea salt or to taste
Instructions
1-Combine the rice, water, and 1 teaspoon olive oil in a medium saucepan. Bring to a boil, cover, and reduce to a simmer. Cook for about 20 minutes or according to the rice package instructions.
2-Uncover and fluff the rice with a fork. Stir in the garlic, scallions, and lime zest while the rice is still hot. Let it cool for one minute.
3-Add the remaining 2 teaspoons olive oil, sea salt, lime juice, cilantro, and optional jalapeño or red pepper flakes. Stir to combine and adjust seasoning as needed.
4-Serve immediately or cool slightly for later use.
