  • Total Time: 1 hour 5 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

210 grams (1 1/2 cups) plain or all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

150 grams (3/4 cup) granulated sugar

1 cup peeled and chopped red apple (1/2 inch pieces)

2 large eggs

1 teaspoon vanilla extract

120 ml (1/2 cup) vegetable or flavorless oil

120 ml (1/2 cup) Greek yogurt

50 grams (1/4 cup) granulated sugar for cinnamon topping

1 teaspoon ground cinnamon for cinnamon topping

1 tablespoon melted butter for cinnamon topping

30 grams (1/4 cup) powdered sugar, sifted for sugar glaze

1 to 2 tablespoons milk for sugar glaze

Instructions

1-First: preheat the oven to 180°C (350°F) standard or 160°C (320°F) fan-forced. Grease and line an 8-inch cake pan with baking or parchment paper to make removal easy and prevent sticking.

2-Next: in a mixing bowl, combine the flour, baking powder, baking soda, salt, sugar, and chopped apple. Stir briefly to mix everything evenly without overworking it.

3-Then: in a separate bowl, whisk the eggs, vanilla extract, oil, and Greek yogurt until well blended for a smooth base.

4-Now: add the wet mixture to the dry ingredients and gently mix with a wooden spoon until just combined; this keeps the cake tender and avoids a tough texture.

5-Spoon: the batter into the prepared pan. For the cinnamon topping, mix the sugar, cinnamon, and melted butter until it resembles wet sand, then sprinkle it evenly over the batter.

6-Bake: for 30 35 minutes or until a skewer inserted in the center comes out clean. Let it cool on a wire rack before proceeding.

7-Finally: to make the glaze, mix the powdered sugar with 1 tablespoon milk until smooth, adding more milk if needed, then drizzle it over the cooled cake before serving. The preparation time is 30 minutes, cook time is 35 minutes, and total time is 1 hour 5 minutes, making it ideal for party hosts looking for quick desserts.
