  • Total Time: 35 minutes
  • Yield: 24 bars 1x

Ingredients

Scale

1 cup (2 sticks) unsalted butter, melted

1 1/2 cups packed brown sugar

2 eggs

1 teaspoon orange extract

1 teaspoon vanilla extract

1/2 teaspoon ground ginger

1 teaspoon baking powder

1/2 teaspoon salt

2 cups all-purpose flour

1 cup white chocolate chips

3/4 cup dried cranberries (Craisins)

8 oz cream cheese, softened

1 1/2 cups powdered sugar

1/2 teaspoon orange extract

1/2 teaspoon vanilla extract

1/3 cup chopped dried cranberries

2 squares white baking chocolate or almond bark, melted

Instructions

1-First Step: Preheat your oven to 350°F (175°C) and line a 15×10 or 13×9 inch jelly roll pan with parchment paper. Lining the pan with parchment paper that overhangs helps with easy removal later and prevents the bars from sticking to the pan. If you prefer thicker bars, use the 13×9 inch pan; for thinner bars, opt for the larger pan.

2-Second Step: In a mixing bowl, beat the melted butter and brown sugar together using an electric mixer at medium speed. Continue beating until the mixture is well combined and slightly smooth. This creates the base of your bars and helps dissolve the sugar slightly.

3-Third Step: Add the eggs, one at a time, along with the orange extract and vanilla extract. Mix until well combined, scraping down the sides of the bowl as needed to ensure everything is incorporated evenly.

4-Fourth Step: Mix in the ground ginger, baking powder, salt, and flour just until blended. Be careful not to overmix at this stage, as overmixing can lead to tough bars. Mix only until you no longer see dry flour.

5-Fifth Step: Fold in the white chocolate chips and dried cranberries by hand. This prevents overmixing and ensures that these add-ins are evenly distributed throughout the batter without breaking them down too much.

6-Sixth Step: Spread the batter evenly in the prepared pan. Use an offset spatula or the back of a spoon to create a smooth, even layer. This ensures that the bars bake uniformly and have a consistent thickness throughout.

7-Seventh Step: Bake for 18-22 minutes until the bars are set and the edges are golden brown. Avoid overbaking to keep bars soft and moist. The center should feel set but not firm when lightly touched.

8-Eighth Step: Let the bars cool completely on a wire rack before adding the frosting. This is crucial because if you frost warm bars, the frosting will melt and slide off. Cooling allows the bars to set completely, making them easier to frost and slice.

While the bars are cooling, prepare the frosting. Beat the cream cheese and powdered sugar until smooth and creamy. This usually takes about 2-3 minutes with an electric mixer on medium speed. Make sure there are no lumps in the cream cheese before proceeding.

Add the orange extract and vanilla extract to the frosting, mixing until well incorporated. The frosting will be thinner than some traditional cream cheese frostings, but don’t worry it will firm up beautifully once chilled.

9-Ninth Step: Spread the frosting evenly over the completely cooled bars. An offset spatula works best for this task, allowing you to create a smooth, even layer of frosting across the entire surface.

10-Tenth Step: Sprinkle the chopped dried cranberries over the frosting, pressing them gently to help them adhere. Then, drizzle with melted white chocolate using a fork or a piping bag for a decorative finish.

Final Step: Chill the bars in the refrigerator for about an hour to set the frosting before slicing into triangles and serving. This chilling time is essential for clean cuts and perfect presentation.
