πŸŽ„ This Cranberry Christmas Cake is a delightful combination of sweet and tart flavors, making it a perfect festive treat.
🍰 Its moist texture and fresh cranberries make it an ideal cake to enjoy with coffee or tea during holiday celebrations.

  • Total Time: 1 hour 5 minutes
  • Yield: 16 servings

Ingredients

– 3 eggs

– 2 cups sugar

– 3/4 cup butter, softened

– 1 teaspoon vanilla

– 2 cups all-purpose flour

– 12 oz fresh cranberries

– 1 ΒΌ cup brown rice flour

– Β½ cup potato starch

– ΒΌ cup tapioca starch

– 1 teaspoon xanthan gum

Instructions

1-Preheat your oven: Preheat your oven to 350 degrees and prepare a 9Γ—13 inch pan by buttering it thoroughly.

2-Beat the eggs with the sugar: Beat the eggs with the sugar using a mixer until slightly thickened and light in color this usually takes about 5-7 minutes. You’ll know it’s ready when the mixture almost doubles in size and forms a ribbon when you lift the beaters.

3-Add the softened butter and vanilla: Add the softened butter and vanilla to the egg mixture, then mix for another two minutes until everything is well incorporated.

4-Stir in the flour: Stir in the flour until just combined. Be careful not to overmix, as this can make the cake tough rather than tender.

5-Add the cranberries: Add the cranberries and stir gently to distribute them evenly throughout the thick batter.

6-Spread the batter into your prepared pan: The batter will be thick and somewhat dough-like, so you may need to press it into the pan to ensure it’s evenly distributed.

7-Bake: Bake for 40-50 minutes (approximately 43 minutes is usually ideal) or until the cake is lightly browned and a toothpick inserted near the center comes out clean.

8-Let the cake cool completely: Let the cake cool completely before cutting it into small pieces about 1”x2”. This patience will be rewarded with clean cuts and perfect presentation.

Notes

πŸ’ Use fresh, raw cranberries, which soften and burst during baking; the sugar balances their tartness.
❄️ If using frozen cranberries, thaw slightly before mixing to avoid batter thickening.
🍊 Try variations by adding nuts or incorporating orange zest or almond extract for extra flavor.
