  • Total Time: 1 hour 50 minutes
  • Yield: 6-8 servings 1x

Ingredients

Scale

45 pounds turkey breast

2 tablespoons brown sugar

4 cloves garlic minced

2 tablespoons canola oil

1 tablespoon dark molasses

1/4 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 teaspoon ground black pepper

2 cups fresh cranberries

14 ounces whole berry cranberry sauce (avoid jellied variety)

1/2 cup lingonberry jam (can substitute with cranberry jam or orange marmalade)

1 cup orange juice (freshly squeezed preferred)

Zest of 1 orange

2 tablespoons cornstarch

Instructions

1-Ready to make this cranberry orange glazed turkey breast? Start by preheating your oven to 375°F (190°C) to get things going smoothly. Pierce the turkey breast all over with a fork to help the flavors soak in. Then, mix up the rub blend with 2 tablespoons brown sugar, 4 cloves minced garlic, 2 tablespoons canola oil, 1 tablespoon dark molasses, 1/4 teaspoon cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper, and rub it thoroughly onto the turkey; set it aside for a bit.

2-Next, in a medium bowl, combine 2 cups fresh cranberries, 14 ounces whole berry cranberry sauce, 1/2 cup lingonberry jam, and the zest of 1 orange. Whisk 2 tablespoons cornstarch into 1 cup orange juice until it’s fully dissolved, then stir this into the cranberry mixture until everything blends well. Lightly grease a roasting pan that’s just the right size for your turkey breast to avoid any mess.

3-Place the turkey in the pan and pour the cranberry sauce mixture around it, but don’t pour too much on top to keep the rub from washing off and burning. Bake for about 1 hour and 30 minutes, or until the internal temperature hits 165°F (74°C). Once it’s done, remove from the oven, cover loosely with foil, and let it rest for 15 minutes. Finally, garnish with fresh cranberries and extra orange zest for a nice touch before serving.
