– 3/4 lb fettuccine or penne pasta
– 1 lb shrimp, peeled and deveined
– 1 tablespoon oil
– 1 small onion, finely chopped
– 2 tablespoons unsalted butter
– 1 garlic clove
– 1/3 cup white wine (optional substitute: fresh lemon juice)
– 2 cups heavy whipping cream
– 1/3 cup parmesan cheese
– Salt and pepper to taste

Instructions
1-Cook the pasta in salted water according to the package instructions, then drain without rinsing to help the sauce adhere.
2-Lightly season the shrimp with salt, pepper, and paprika. Heat oil in a large skillet over medium-high heat, add shrimp in a single layer, and cook 1-2 minutes per side until opaque and golden pink. Remove shrimp from the pan.
3-In the same pan, sautΓ© the onion in butter over medium-high heat until golden. Add garlic and cook for another minute. Pour in white wine (or lemon juice if omitting wine) and reduce by about 75%, scraping the pan to deglaze.
4-Stir in the heavy cream and simmer for 2 minutes. Sprinkle parmesan cheese on top, stir gently until creamy, then remove from heat. Avoid boiling the sauce after adding cheese to prevent separation. Season with paprika, salt, and pepper.
5-Combine the cooked shrimp and drained pasta with the sauce. Garnish with parsley, basil, extra parmesan, or freshly cracked pepper if desired.
