1 cup cottage cheese

1 red bell pepper, finely chopped

1 cup fresh spinach or kale, finely chopped

1 teaspoon olive oil

3 tablespoons sliced green onion

1/2 cup shredded cheese (such as Monterey Jack or substitute with cheddar, mozzarella, or Swiss)

1/2 cup crumbled feta cheese (can substitute with goat cheese or Parmesan)

1/4 teaspoon salt

1/4 teaspoon black pepper

Instructions

1-Preheat the oven to 350°F (175°C) and grease an 8-inch round baking or pie dish with cooking spray or oil.

2-Prepare the vegetables by heating olive oil in a small sauté pan over medium heat. Sauté the red bell pepper, spinach (or kale), and green onion for 3-4 minutes until slightly softened.

3-Cool the vegetables by transferring them to a small bowl and setting aside to cool slightly.

4-Create the egg mixture by combining the egg whites, cottage cheese, shredded cheese, crumbled feta, salt, and pepper in a large bowl. Blend the mixture until smooth using an immersion or tabletop blender, about 30-60 seconds. This step is crucial for achieving that silky, custard-like texture.

5-Combine everything by stirring the cooled sautéed vegetables into the egg mixture.

6-Pour and bake the mixture into the prepared baking dish. Bake for 35-45 minutes until the quiche is firm in the center and golden brown on top.
