๐ŸŒฎ Savor a hearty and delicious taco soup made with simple ingredients that’s quick to prepare and packed with flavor.
๐Ÿฒ This easy recipe is perfect for busy weeknights, offering a satisfying meal with nutritious beans, veggies, and beef.

  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

1 Tbsp olive oil

1 lb ground beef

1 yellow onion

4 cloves garlic

1 cup frozen corn

2 10 oz cans diced tomatoes with green chiles

1 15 oz can pinto beans, drained

1 15 oz can black beans, drained

1 packet taco seasoning (or homemade equivalent)

1 packet ranch seasoning (or homemade equivalent)

3 Tbsp tomato paste

2 cups water

Instructions

1-Prepare all ingredients: chopping the onion and mincing the garlic; this step ensures smooth cooking and saves time later.

2-In a large pot, heat a small amount of oil over medium heat and sautรฉ the diced onions until they turn translucent, about 3-4 minutes.

3-Add the ground beef or turkey to the pot, cooking until it’s browned and fully cooked, which takes roughly 6-8 minutes. For vegan options, use crumbled tofu or lentils instead.

4-Stir in the taco seasoning and cook for 1 minute to let the flavors blend.

5-Add the diced tomatoes with green chilies, black beans, corn, and broth to the pot. Mix everything well to combine.

6-Bring the soup to a boil, then lower the heat and let it simmer uncovered for 20-25 minutes so the flavors meld together.

7-Taste and adjust the seasoning as needed; add salt or more taco seasoning if you like. For those needing gluten-free options, check that all seasonings are compliant.

8-Finally, serve the soup hot with your favorite toppings like shredded cheese, sour cream, or chopped cilantro. It also freezes well for easy meals ahead.
