Instructions

1-Getting started with this fried calamari recipe is straightforward and fun, even if you’re new to frying. Begin by slicing the calamari tubes into ¾-inch thick rings for even cooking. In a medium bowl, mix 1 teaspoon kosher salt into ½ cup milk, then add the calamari rings and refrigerate for 30 minutes to tenderize them.

2-Next, in a large bowl, whisk together 1 ½ cups all-purpose flour, ⅓ cup cornstarch, ½ teaspoon baking powder, ¾ teaspoon dried oregano, ½ teaspoon black pepper, and ½ teaspoon cayenne pepper.
