Ingredients

– 3 fresh jalapeno peppers sliced into rings

– Β½ cup all-purpose flour

– Β½ teaspoon garlic powder

– Β½ teaspoon paprika

– 4 ounces of light beer or fizzy seltzer or clear soda

– 2 to 3 cups of peanut or vegetable oil for frying

Instructions

1-First, wash and slice the 3 fresh jalapeno peppers into rings, removing seeds if you want a milder taste. Pat them dry to help the batter stick well. In a bowl, mix Β½ cup all-purpose flour, Β½ teaspoon garlic powder, Β½ teaspoon paprika, salt and pepper to taste, 2 large eggs, and 4 ounces of light beer or fizzy seltzer to create the batter.

2-Heating and Frying Process: Heat 2 to 3 cups of peanut or vegetable oil in a large pan to medium heat, making sure it doesn’t boil around 350Β°F is ideal. Dip the jalapeno slices in the batter, then fry them in batches for 5 to 6 minutes each until golden and crispy, turning as needed to cook evenly. Once done, drain on paper towels and season lightly with salt while hot.

3-Serve with ranch or blue cheese dip if desired, and you’re set for a snack that pairs great with drinks.
