1 cup chopped kale (if desired)

1 to 2 cups freshly grated sharp cheddar cheese (or dairy-free cheese shreds or nutritional yeast for vegan)

Instructions

1-First, prepare all ingredients by peeling and cubing the potatoes, mincing garlic, and chopping the onion to make cooking smooth.

2-In a large pot, sautรฉ the onion and garlic in oil and butter until fragrant, about 3-5 minutes, then add spices.

3-Stir in potatoes and stock, bring to a boil, and simmer covered until tender.

4-Use a blender or mash potatoes partially for creaminess, then add 1 cup organic heavy cream, 2 tablespoons white cooking wine, and 1 cup chopped kale if you like.
