Ingredients
1 pound (about 450 grams) boneless, skinless chicken thighs
2 cloves chopped garlic
1 cup (240 ml) chicken broth or water
1 1/2 teaspoons garlic herb seasoning divided
2 tablespoons fresh minced herbs such as parsley, chives, or tarragon
4 ounces (about 115 grams) soft cheese cut into 4 pieces (goat cheese or cream cheese)
Salt and pepper optionally depending on the seasoning blend
Oil for cooking
Instructions
1-First, pat the chicken dry, then oil it and season with salt, pepper, and half the herb seasoning for a flavorful base.
2-Next, cook the chicken in a cold large skillet over medium-high heat for 8 minutes on one side without moving it to get that perfect sear.
3-Flip the chicken and cook for 2 more minutes until it reaches an internal temperature of 165Β°F (74Β°C) for safety and tenderness.
4-Remove the chicken from the pan and lower the heat to low, then add more oil, garlic, and the remaining seasoning.
5-Deglaze the pan with 1/4 cup (60 ml) of broth or water, scraping up those tasty browned bits for extra flavor.
6-Add the cheese gradually while whisking to create a creamy sauce, and stir in extra liquid if needed to reach your desired consistency.
7-Finally, stir in the fresh herbs off the heat, return the chicken and its juices to the pan, and coat everything in the sauce before serving.
