Instructions
1-Preheat your oven to 350 degrees Fahrenheit.
2-In a mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. This should take about 2-3 minutes with an electric mixer.
3-Add the large egg and unsulphured molasses to the butter mixture, mixing well until fully incorporated.
4-In a separate bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and dried ground ginger.
5-Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
6-Scoop or form the dough into balls slightly smaller than a golf ball.
7-If you prefer extra sweetness and texture, roll the dough balls in granulated sugar before baking.
8-Place the dough balls on an ungreased baking sheet, spacing them 2 to 3 inches apart to allow for spreading.
9-Bake for 10 to 12 minutes, until the edges are slightly crisp but the centers still look soft.
10-Remove from the oven and let the cookies cool on the baking sheet for about 10 minutes. This allows them to set properly.
11-Transfer the cookies to a wire rack to finish cooling completely.
