1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

Instructions

1-Preheat the oven: Preheat the oven to 220ยฐC (425ยฐF) for standard ovens or 200ยฐC (400ยฐF) for fan ovens.

2-Cut the carrots: Cut the carrots diagonally into 4 cm lengths, halving thicker ends to ensure uniform size.

3-Toss the carrots: In a bowl, toss the carrots with brown sugar, melted butter, minced garlic, olive oil, salt, and pepper.

4-Spread the carrots: Spread the carrots evenly on a roasting tray.

5-Roast the carrots: Roast for 15 minutes, then toss the carrots and roast for another 10 minutes until they are tender with caramelized edges and glaze remains on the tray.

6-Final toss and serve: Toss the carrots in the glaze, sprinkle parsley if desired, and serve warm.
