1 cup (136 grams) all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon ground cinnamon

Pinch of freshly grated nutmeg (optional)

1 cup (120 grams) granola (without dried fruit)

4 ounces (113 grams) bittersweet, milk, or white chocolate, finely chopped

1/2 cup (60 grams) shredded coconut (sweetened preferred)

1 stick (8 tablespoons; 4 ounces; 113 grams) unsalted butter, at room temperature

1/2 cup (100 grams) packed light brown sugar

1/4 cup (50 grams) granulated sugar

1 large egg at room temperature

1 1/2 teaspoons pure vanilla extract

1/4 teaspoon fine sea salt

Instructions

1-First, preheat the oven to 325 degrees F and prepare an 8-inch square baking pan by buttering and lining it for easy removal.

2-In one bowl, mix the dry ingredients: 1 cup all-purpose flour, 1/4 teaspoon baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon ground cinnamon, and a pinch of nutmeg if you’d like.

3-In another bowl, combine 1 cup granola, 4 ounces finely chopped chocolate, and 1/2 cup shredded coconut.

4-Next, beat 1 stick of unsalted butter at room temperature until it’s creamy, then add 1/2 cup packed light brown sugar, 1/4 cup granulated sugar, 1 large egg, 1 1/2 teaspoons pure vanilla extract, and 1/4 teaspoon fine sea salt. Mix these until well combined.

5-Gradually incorporate the dry ingredients into the wet mixture, stirring gently.

6-Once that’s done, fold in the granola, chocolate, and coconut mixture carefully.

7-Pour the batter into your prepared pan and spread it evenly.

8-Bake for 35 to 40 minutes, or until the top is golden and a skewer inserted comes out clean.

9-Let it cool in the pan for 10 minutes before unmolding and cooling completely on a rack.
