Instructions
1-Pour about half a cup of the 2 cups enchilada sauce into the bottom of a baking dish to create a flavorful base.
2-Lay a tortilla flat, spoon the beef mixture down the center, and add about 1/8 cup of the cheese mixture on top.
3-Roll the tortilla and place it seam side down in the baking dish, then repeat with the remaining 7 tortillas.
4-Top the assembled enchiladas with the rest of the enchilada sauce and the remaining cheese for a gooey finish.
5-Bake for 15 to 20 minutes or until the cheese is melted and everything is heated through.
