1 teaspoon fine-grain sea salt (adjust to ยพ teaspoon if using table salt)

ยฝ teaspoon ground cinnamon

ยฝ cup melted coconut oil or olive oil

ยฝ cup maple syrup or honey

1 teaspoon vanilla extract

ยฝ cup coconut flakes (add halfway through baking for toasting)

Instructions

1-Preheat the oven to 350 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.

2-In a large mixing bowl, combine the oats, nuts and/or seeds, salt, and cinnamon, ensuring everything mixes well for even flavor.

3-Pour in the melted coconut oil or olive oil, maple syrup or honey, and vanilla extract; stir until all ingredients are evenly coated for a uniform mix.

4-Spread the mixture evenly on the prepared baking sheet to promote even baking and crispiness.

5-Bake for 21 to 24 minutes, stirring halfway through; for clumpier granola, press the mixture down with a spatula after stirring to create those satisfying chunks.

6-Allow the granola to cool completely, undisturbed for at least 45 minutes, then add the dried fruit and any optional mix-ins; break into pieces as desired once cooled.

7-Store in an airtight container at room temperature for 1 to 2 weeks, or freeze for up to 3 months; thaw to room temperature before serving to keep it fresh.
