4 pounds (1.8 kg) blueberries, raspberries, or blackberries

pounds (2 kg) strawberries (hulled and quartered), peaches, nectarines, plums, or apricots (pitted and chopped)

3 cups (660 g) sugar

¼ cup (60 g) fresh lemon or lime juice (about 2 lemons or limes)

Instructions

1-Preparation Phase: First, prepare your fruit by washing it thoroughly. For strawberries, hull and quarter them; for stone fruits like peaches, nectarines, plums, or apricots, pit and chop them into uniform pieces. Berries can be left whole or gently crushed depending on your preference for texture.

2-Preparation Phase: In a large heavy-bottomed pot, combine the fruit and sugar. This initial step is crucial for developing flavor. Let the mixture sit for at least 15 minutes, though you can let it sit overnight in the refrigerator for even better results. Stir occasionally to help dissolve the sugar and encourage the fruit to release its natural juices.

3-Cooking Process: After the fruit and sugar have macerated, place the pot over medium-high heat. Bring the mixture to a boil, which should take about 3 4 minutes. You’ll notice the fruit releasing more liquid as it heats.

4-Cooking Process: Once boiling, reduce the heat to medium and continue cooking. For the first 15-20 minutes, you only need to stir occasionally. As the mixture begins to thicken, you’ll need to stir more frequently to prevent sticking or burning. The total cooking time will be 40 50 minutes, during which the liquid will evaporate and the fruit will break down into a jam-like texture.

5-Finishing Touches: When the jam has reduced and begun to thicken, add the lemon or lime juice. This step is important as the acidity helps balance the sweetness and aids in the setting process. Continue cooking for another 8 10 minutes, stirring constantly at this stage to prevent scorching.

6-Finishing Touches: To test if your jam has reached the right consistency, place a small spoonful on a chilled plate. If it holds its shape without running when you push it with your finger, it’s ready. If it’s still too liquid, continue cooking for a few more minutes and test again.

7-Finishing Touches: Once your jam has reached the desired consistency, remove it from the heat. Carefully ladle the hot jam into 4 sterilized half-pint (250 ml) jars, leaving about 1/4 inch of headspace. Seal the jars immediately and let them cool to room temperature before refrigerating.
