– 2 heads frisee, chopped into bite-sized pieces
– 4 cups wild arugula
– 1 cup candied walnuts
– 2 large Honeycrisp apples, unpeeled and sliced into thin matchsticks
– 1/4 cup plus 2 tablespoons apple cider vinegar
– 2 1/2 tablespoons honey
– 2 tablespoons walnuts, lightly chopped (candied or plain)
– 1/4 teaspoon cinnamon
– 1/4 teaspoon black pepper
– 1/4 teaspoon plus a pinch of salt
– Pinch of cumin
– Pinch of curry powder
– 1/2 cup plus 2 tablespoons olive or avocado oil
Instructions
1-Combine all vinaigrette ingredients except the oil in a food processor and blend until well mixed. Slowly drizzle in the oil while processing to emulsify the dressing. This can be made ahead and refrigerated for convenience.
2-In a large bowl, mix the frisee, arugula, candied walnuts, and half of the sliced apples. Drizzle with some vinaigrette and toss lightly to coat the ingredients evenly.
3-Arrange the salad on plates or a serving platter, topping with the remaining apple slices, extra candied walnuts if desired, and a final drizzle of vinaigrette.
4-Serve immediately, optionally garnished with additional walnuts, to keep the textures crisp and fresh.
