– 2 large eggs (room temperature)
– 3/4 cup buttermilk (can be homemade by mixing milk with lemon juice or vinegar and letting it sit for 5 minutes)
– 1/2 cup water
– 1/4 cup melted unsalted butter (reduce salt if salted butter is used)
– Vegetable oil or butter for frying (bacon fat may be used for added flavor)
Instructions
1-In a medium bowl, whisk together the flour, cornmeal, baking powder, sugar, and salt until well combined.
2-In a separate large bowl, whisk the eggs, water, and buttermilk until smooth, then add the melted butter and mix gently.
3-Add the dry ingredients to the wet ingredients and stir just until combined, avoiding overmixing to keep the texture light.
4-Heat vegetable oil in a large skillet or griddle over medium heat until itβs hot but not smoking.
5-Pour about 1/4 cup of batter for each cake into the skillet.
6-Cook until bubbles form on the surface and the edges turn deep golden brown, then flip and cook the other side until golden. Transfer to paper towels and serve immediately.
