Instructions

1-Remove giblets from the chicken and allow it to come to room temperature for even cooking.

2-Pat the chicken dry with paper towels and drizzle or spray with 2 teaspoons of cooking oil to lock in moisture.

3-Generously season the chicken inside and out with 3 tablespoons of the salt, pepper, and garlic powder seasoning. If you like, apply ΒΌ cup BBQ rub evenly over the chicken for added flavor.

4-Truss the legs with kitchen twine and tuck the wing tips behind the back to promote even cooking and a better look.

5-Preheat the smoker to 275Β°F (135Β°C) to get that perfect smoky heat.

6-Place the chicken breast side up directly on the smoker rack and cook for about 2 hours, keeping an eye on it for the best results.

7-After 45 minutes of smoking, spray or brush the chicken with cooking oil or butter to help get that crispy skin we all love.

8-At 1.5 hours, rotate the chicken for even cooking and spray or brush again; check that the breast is about 140Β°F (60Β°C) and thighs about 150Β°F (65Β°C) internally.

9-Remove the chicken around 2 hours when the internal temperature reaches 165Β°F (74Β°C) in the breast and 175Β°F (79Β°C) in the thigh, making sure the thermometer doesn’t touch the bone.

10-Let the chicken rest for 15-20 minutes before carving to let the juices spread out and keep it tender.
