Ingredients

– 3-4 pound boneless rib roast for main protein

– 4 tablespoons unsalted butter, softened for herb compound butter

– 4 cloves garlic, finely chopped or grated for aromatic and pungent notes

– ยฝ cup fresh parsley leaves, finely chopped for fresh herbal brightness

– 5-6 fresh sage leaves, finely chopped for earthy depth

– 2 teaspoons kosher salt for seasoning and enhancing taste

– 1 teaspoon coarsely ground black pepper for spicy kick

Instructions

1-Preheat oven to 500ยฐF (260ยฐC) and let the 3-4 pound boneless rib roast sit at room temperature for about 15 minutes.

2-In a bowl, mix 4 tablespoons softened unsalted butter with 4 cloves finely chopped garlic, ยฝ cup finely chopped fresh parsley, 5-6 finely chopped fresh sage leaves, 2 teaspoons kosher salt, and 1 teaspoon coarsely ground black pepper to make the herb compound butter.

3-Thoroughly dry the rib roast with paper towels to help the butter stick well.

4-Apply the herb compound butter all over the roast for even coverage.

5-Put the roast fat side up in a cast iron skillet and roast at 500ยฐF (260ยฐC) for 15 minutes to create a nice sear.

6-Reduce the oven temperature to 325ยฐF (165ยฐC) and keep roasting for 45-50 minutes, or until the internal temperature hits 125ยฐF (52ยฐC) for medium rare.

7-Take the roast out of the oven and let it rest for at least 15 minutes to let the juices settle before slicing into ยฝ inch slices for serving.
