Ingredients

– 1/2 cup salted butter, slightly softened

– 8 oz cream cheese, slightly softened

– 1/4 cup fresh lemon juice (from approximately 1 large lemon)

– 1 heaping tablespoon lemon zest (from approximately 1 large lemon)

– 5 cups powdered sugar

Instructions

1-Juice and zest one large lemon to obtain 1/4 cup juice and 1 heaping tablespoon zest.

2-Combine the softened cream cheese, softened butter, lemon juice, and lemon zest in a mixer bowl.

3-Mix on medium speed for about 2 minutes until fully combined and smooth.

4-Measure 5 cups powdered sugar, sifting if lumpy. Gradually add the sugar to the mixer, covering the bowl with a towel to prevent mess.

5-Mix on the lowest setting for 30 seconds until incorporated. Scrape down the sides of the bowl.

6-Increase speed to medium-high and mix for another 30-45 seconds until the frosting is light and fluffy.

7-Optionally, add a tiny drop of yellow food coloring for a more pronounced lemon color.

8-Taste and adjust lemon zest or consistency if needed.

9-Refrigerate the frosting for at least 1 hour (or longer) to firm up and develop flavor before using.
