Instructions

1-Preheat the oven: Preheat the oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper to prevent sticking.

2-In a large bowl, cream together 1 cup (226 g) softened unsalted butter, ยพ cup (150 g) granulated sugar, and 2 tablespoons fresh lemon zest using an electric mixer until light and fluffy this step brings out that amazing lemon flavor!

3-In a separate bowl, whisk together 2 cups (250 g) all-purpose flour, 2 tablespoons cornstarch, and ยฝ teaspoon salt to ensure even mixing.

4-Gradually add the dry ingredients to the wet mixture and stir until fully combined, being careful not to overmix for that perfect melt-in-your-mouth texture.

5-Scoop the dough into 1 tablespoon-sized balls, roll them smooth between your palms, and place them on the prepared baking sheet, spacing them at least 2 inches apart.

6-Bake for 8 to 10 minutes, then immediately flatten each cookie gently with the bottom of a glass to create a soft, even surface.

7-Allow the cookies to cool completely before moving on. For the icing, whisk together 1 ยพ cups (220 g) powdered sugar and 2 tablespoons fresh-squeezed lemon juice until smooth, adjusting as needed. Spread on the cookies and garnish with lemon zest if you like let it set for the best results!
