Ingredients
– 2 pounds (1 kilogram) boneless, skinless chicken thigh fillets
– 3 large garlic cloves, minced (approximately 3 teaspoons)
– 1 tablespoon white wine vinegar (or substitute with red wine or apple cider vinegar)
– 3 tablespoons lemon juice
– 1 tablespoon extra virgin olive oil
– 3 tablespoons Greek yogurt, preferably full fat
– 1 and 1/2 tablespoons dried oregano
– 1 teaspoon salt
– Black pepper to taste
– 2 cucumbers (to yield about 1/2 to 3/4 cup grated cucumber after squeezing out juice)
– 1 and 1/4 cups Greek yogurt, preferably full fat
– 1 tablespoon lemon juice
– 1 tablespoon extra virgin olive oil (more can be added for richer taste)
– 1 garlic clove, minced
– 1/4 teaspoon salt
– Black pepper to taste
– 3 tomatoes, deseeded and diced
– 3 cucumbers, diced
– 1/2 red Spanish onion, finely chopped
– 1/4 cup fresh parsley leaves (optional)
– Salt and pepper to taste
– 4 to 6 pita breads or flatbreads, preferably warmed
Instructions
1-Mix all marinade ingredients in a sealable bag and massage well. Add chicken and ensure all pieces are coated. Refrigerate for at least 2 hours, ideally 3 hours, up to 12 hours but not exceeding 24 hours.
2-Prepare tzatziki by halving cucumbers lengthwise, scraping out watery seeds, then coarsely grating and squeezing out excess liquid using paper towels or a tea towel. Combine grated cucumber with Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper. Let rest for at least 20 minutes.
3-Mix diced tomatoes, cucumbers, red onion, parsley (optional), salt, and pepper to form the salad.
4-Preheat grill or heat 1 tablespoon oil in a frying pan over medium-high heat.
5-Remove chicken from marinade and cook 2 to 3 minutes per side until golden and cooked through. Cooking time varies based on chicken size.
6-Rest cooked chicken covered loosely with foil for 5 minutes.
7-Assemble gyros by placing salad in the middle of warmed pita or flatbread, topping with chicken and generous tzatziki. Roll and secure with parchment or foil, or serve components separately for self-assembly.
