2 packed cups chopped kale, ribs removed (Dino/Tuscan kale recommended)
1 teaspoon fresh Meyer lemon juice
Salt and black pepper to taste
2 naan flatbreads

4 ounces goat cheese
1 to 2 Meyer lemons, thinly sliced

Instructions
1- Preheat oven to 400 degrees Fahrenheit.
2- Heat olive oil in a medium skillet and cook minced garlic for 2 minutes.
3- Add chopped kale and fresh Meyer lemon juice to the skillet. Season with salt and black pepper, then cook until kale is tender and wilted, about 3 to 4 minutes. Remove from heat.
4- Place naan flatbreads on a baking sheet and brush lightly with olive oil.
5- Evenly distribute goat cheese chunks over the flatbreads.
6- Top each with cooked kale and 3 to 4 lemon slices.
7- Sprinkle crushed red pepper flakes if desired.
8- Bake in the preheated oven for 12 to 14 minutes, or until the cheese is melted.
9- Remove from oven, cut into pieces, and serve warm.
10- Note: The lemon slices can be eaten or removed according to preference.
