Ingredients

– 450g firm tofu

– 1/4 finely chopped red onion

– 3 minced garlic cloves

– 1 1/2 teaspoons cumin

– 1 1/2 teaspoons coriander

– 1 teaspoon sumac

– 1 teaspoon dried mint

– 1/2 teaspoon turmeric

– 1/2 teaspoon chili powder

– 1/2 to 1 teaspoon salt

– 1/4 teaspoon black pepper

– 3 tablespoons tomato puree

– 65g plain or chickpea flour

– 15g finely chopped fresh parsley

– 15g finely chopped fresh coriander

Instructions

1-Preparing the Tofu Mixture: Start by breaking the 450g of firm tofu into small pieces into a large mixing bowl. Add the finely chopped red onion, minced garlic, and all the spices: cumin, coriander, sumac, dried mint, turmeric, chili powder, salt, and pepper. Pour in the tomato puree and sprinkle the flour over the top.

2-Preparing the Tofu Mixture: Next, add the chopped fresh parsley and coriander. Now, the fun part: use your hands to mash everything together. Continue mixing until the ingredients are well combined and the mixture can hold its shape. This usually takes a few minutes of good mixing. The heat from your hands helps soften the tofu and meld the flavors together.

3-Shaping the Kebabs: Once your mixture is ready, it is time to shape it. Take a handful of the mixture and form it into small kebabs or round patties. You should be able to make about 12 kebabs from this batch. If the mixture feels too wet and sticky, add a little more flour.
