– 4 Hatch green chile peppers, roasted, peeled, and chopped (or 1 4-ounce can chopped Hatch chile peppers)

– 2 cups shredded Mexican blend cheese

– 2 tomatoes, chopped

– Chopped lettuce for topping

– 6 yellow corn tortillas

– 1/4 cup vegetable oil or canola oil for frying

– 2 eggs, fried over easy or over medium

Instructions

1-Preheat the oven: to 350ยฐF (175ยฐC).

2-Brown the ground beef: with chopped onion and stir in the roasted Hatch green chiles.

3-Fry the corn tortillas: in hot oil for about 30 seconds each.

4-Layer the tortillas: with beef mixture, sauce, cheese, and tomatoes in an oven dish.

5-Fry the eggs: while assembling.

6-Bake: until the cheese is melted and bubbly.

7-Serve: with toppings like fresh tomato and lettuce.
