Ingredients
5 peaches, peeled, cored, and sliced (about 4 cups) or 1 quart jar of canned peaches, undrained
3/4 cup sugar
1/4 teaspoon salt
6 tablespoons butter
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
Instructions
1-Preparing the Peaches: First, combine the sliced peaches, 3/4 cup sugar, and 1/4 teaspoon salt in a saucepan and cook on medium heat until the sugar dissolves and peaches release their juice. This step helps to macerate the peaches, drawing out their natural juices and creating a delicious syrup base. If youβre using canned peaches, this step can be skipped since the canning liquid already serves as the syrup.
2-Making the Batter: Preheat your oven to 350Β°F (175Β°C). While the oven heats, prepare your batter by placing the butter sliced into pieces in a 9Γ13 inch baking dish and put it in the oven until melted, then remove. In a large bowl, mix the flour, sugar, baking powder, and salt; then stir in the milk just until combined. Be careful not to overmix stir just until the flour is moistened to avoid developing gluten, which can make the batter tough.
3-Assembling and Baking: Pour this batter over the melted butter in the baking dish. Do not stir or mix them together the batter will naturally rise up as it bakes. Spoon the peaches and their juices over the batter and sprinkle cinnamon generously on top. Bake for 38-40 minutes at 350Β°F until golden. The batter will puff up around the peaches, creating that classic cobbler appearance. Serve warm, optionally with ice cream for that perfect finishing touch.
